Matcha White Chocolate Brownies Recipe!

Really want to sleep but I've been having this splitting headache the moment I got out of bed this morning and it's making me sleepless.


I haven't had a headache for sucha long time that it's pretty unbearable even tho it's not the full blown kind.

I used to get headaches often. And they can get really bad sometimes. Staring at lights make me nauseous. Moving my head too much makes me nauseous. The pounding felt like there was construction work going on inside my head.

Every little thing can trigger a headache.

Some perfumes can induce a headache. They still do. In particular the ones which smell too musky/floral-y/powdery. Like the new Gucci Bamboo that @jongsy has been using recently. šŸ˜­

Being under the sun for too long gives me headaches.

Being exposed to loud noises for a prolonged period of time also headache.

No coffee/too much sleep/too little sleep? Headache.

Brain, Y U SO sensitive for what?! I read somewhere that people with a certain type of brain chemistry are more sensitive to certain triggers get headaches more often than others. Sigh.

But well, recently I haven't been getting headaches as often as I used to. Healthier lifestyle maybe? So I should count myself lucky already. Once in a blue moon ain't so bad.

Okay need to get rid of my phone cause the light from the screen isn't helping.


Bought this tiny tub of matcha powder and it's due to expire next year in Jan. So I've been searching for recipes to finish using it!

Baked Matcha White Chocolate Brownies last night and they turned out well except that I didn't stir out the sugar lumps well enough #lazy and the surface turned out very holey. Hahaha.

Other than that, it is a very straightforward and fuss free recipe. I barely even took 20 minutes with the ingredients prep. Spent under an hour from start to end!

Not so pretty but so yummehhhhh. Don't judge a brownie on how it looks. *wags finger*

It's so fudgey-licious and the white chocolate bits balances out the slightly bitter matcha taste really well. And the most important part – it's not too sweet!

I'm scared of recipes which yield overly sweet bakes. šŸ˜Ø

In town for a store fitting briefing later and I picked Toss & Turn for lunch because I walked past the other day and saw that they have acai bowls!


Hope it doesn't let me down. Hahaha.



The acai smoothie was not cold at all when I was expecting it to be. All the other acai bowls I've had were cold leh?? Why this one so weird. It was hovering between room temp and slightly chilled.

Meh. Don't even wanna bother telling you what was in the bowl cause it's just so damn bad?

I'll stick to my acai bowl from Coffee Academics thankyouverymuch.

Plus this was such a small bowl for $9.50!

It's my go-to place for a quick and healthy fix! A little pricey la but the sashimi is super fresh and good!!

Decided to indulge a little after the disappointing bowl of acai and created my own bowl instead of having my usual kaisendon.

Added two slabs of unagi because the staff enthusiastically recommended it to me. Lobster salad was sold out. But no regrets. They didn't lie. IT WAS REALLY GOOD. šŸ˜

Okay I've a bit of free time now so here goes!


– 40g unsalted butter

– 90g white chocolate (recipe called for shredded but i used white chocolate chips cause I've a bag of them lying around!)

– 50g brown sugar

– 2 eggs

– 50g cake flour (plain flour works fine too!)

– 1 tbsp + 1 tsp matcha powder

– 1/2 tsp baking powder (mine is double acting but I don't think there's a discernible difference, I googled!)

– 40g white chocolate chips

***Matcha powder and drinking green tea powder are different! Please make sure that your matcha powder is the kind which is suitable for baking. I got mine from Liang Court's Japanese supermarket but I think Red Man sells it too! I've seen it at the AMK outlet.


1) Preheat oven to 180 deg C before preparing your ingredients.

2) Line your loaf pan with parchment paper.

*I skipped this step because I used my non stick brownie pan! Although I would probably butter the pan next time because the some of my brownies got stuck to the bottom slightly when I tried taking them out LOL the non stick is lie šŸ˜¢

3) Sift flour, matcha powder and baking powder together in a big bowl.

4) Microwave the butter and 90g white chocolate until it melts.

*I don't own a microwave so I used the double boiler method. It involves using a saucepan and bowl which most of us readily have at home. I don't think I will be able to describe as well as visuals can show you.. Just google double boil chocolate and you'll get it! šŸ‘ŒšŸ»

5) Add sugar and mix well.

6) Add the eggs to the mixture a third at a time and mix till homogenous.

7) Combine all ingredients (except 40g white chocolate chips) with a spatula.

8) Pour mixture into pan and sprinkle with white chocolate chips!

*I filled the cavities till 3/4 full and got 5 full sized brownies! If you don't have a brownie pan I suppose muffin/cupcake pan works just as well too, just that the shape will be different. I'm particular about shapes so I have both the brownie pan and the muffin pan. Hahaha.

9) Bake for 15-20 minutes at 180 deg C till cooked.

*This depends on different ovens la so you gotta monitor as your brownies are baking! Once the edges turn a little brown you know it's roughly time to get them out. Ehhh it's hard for me to tell you exactly when the brownies are done, I've been baking for quite a few years so I sort of just know. But if you stick a toothpick in the middle and it comes out with wet batter than you'll probably have to leave it in the oven for another 2-3 minutes.

10) Cool brownies in pan before taking them out. Will taste awesome with a scoop of vanilla ice cream!!

*This one my own tip la hahahaha I also didn't try it with ice cream but I imagine that it'll be damn bomb esp when the brownie is still warm SLURRPPPS šŸ˜‹šŸ˜‹šŸ˜‹

Tadahhh that's all!

It's one of the simpler recipes that I've ever tried and it's pretty foolproof in my opinion! Doesn't take much time and washing up is also minimal. Great for baking after work!

I prefer leaving the complicated recipes to weekends because I don't like rushing through. So happy to get reacquainted with baking again, such a good stress buster.

I suddenly remembered what triggered my matcha baking interest.. I didn't even know that I had a tub of matcha powder at home.

The other day I was at Sarnies grabbing a cup of coffee and I saw that they have these yummeh looking matcha white chocolate brownies. Ordered a slice to try and it was so good that I was tempted to recreate my own version of it!

Googled a few recipes and settled on one that looks like it might taste similar. Tweaked it a bit and turned out I have all the ingredients at home! šŸŽ‰

Thus sparked off my search for awesome matcha recipes. More, soon!!
